Mash texture and safe temperature
Chicken meatballs are safely cooked when their centres reach at least 74°C/165°F. Meat colour alone is not a reliable indicator, so measure the thickest meatball.[1]
Blending cauliflower does not remove its fibre, but it can disrupt some of its physical structure. Stop as soon as no lumps remain. Research indicates that the degree of mechanical processing of vegetables can affect a meal’s glycaemic response.[4]
Step by step
Method
- 1
Preheat the oven and prepare the cauliflower
Preheat the oven to 210°C/410°F conventional or 190°C/375°F fan. Line a tray with baking paper. Steam 150 g cauliflower for 8–10 minutes, then dry it in the warm uncovered pan for 1–2 minutes.
- 2
Mix the meatball mixture
Mix 180 g cold ground chicken with 15 g egg white, parsley, smoked paprika, cumin, garlic powder, onion powder, pepper and salt just until combined. Refrigerate for 10 minutes.
- 3
Shape the meatballs
With damp hands, shape 6 evenly sized meatballs. If soft, do not add breadcrumbs; chill the mixture again for 5 minutes.
- 4
Bake
Space the meatballs on the tray and brush with 5 g olive oil. Bake for 14–17 minutes. For deeper colour, use the top grill for the final minute or two. The centre must reach at least 74°C/165°F.
- 5
Blend the mash
Blend the hot, well-dried cauliflower with 5 g olive oil and 0.2 g nutmeg. Stop the immersion blender as soon as no lumps remain, then add salt and pepper to taste.
- 6
Serve
Spread the mash over the plate, add the meatballs and let them rest for 2 minutes before eating.
The role of each ingredient
Why the combination works
Chicken breast
This lean protein source needs close control of baking time, so remove the meatballs as soon as they reach a safe temperature.
Egg white
A small amount binds the mixture without breadcrumbs or flour; too much could make the texture rubbery.
Spices and parsley
Smoked paprika and cumin add warmth, while parsley provides a fresh finish without a sweet sauce.
Cauliflower, oil and nutmeg
Cauliflower creates a low-carb side, oil adds smoothness and nutmeg provides a warm aromatic note.
Tips and variations
Adapt the flavour and serving style
- For a more Mediterranean flavour, replace the cumin with oregano and add a little lemon zest.
- For a sharper version, add ½ teaspoon Dijon mustard with no added sugar and check the product label.
- Replace the parsley with chives, coriander or tarragon; choose one main herb.
- For a richer mash, replace the 5 g olive oil with 5 g butter. You can also add 10 g full-fat Greek yoghurt; the nutrition values will change.
- Serve the meatballs in hot homemade bone broth instead of with mash. Bake them to 74°C/165°F before adding.
- For several servings, use a sufficiently large tray and leave space between the meatballs so they roast rather than steam.
Storage
Frequently asked questions
How should I store the prepared meal?
Cool the meatballs and mash promptly, store separately in shallow airtight containers and refrigerate within two hours. Use within 3–4 days. Reheat meatballs to 74°C/165°F.
Can I freeze the meatballs?
Yes. Freeze cooled baked meatballs in one layer, then transfer to a bag or container and use within about three months for best quality. The mash may be more watery after thawing.
Can I use chicken thigh?
Yes. Use the same amount, but note that it contains more fat and changes the nutrition values. This version must also reach 74°C/165°F in the centre.
Why are my meatballs falling apart?
The mixture may be too warm, the meat unevenly ground or the mixture insufficiently bound. Chill it, combine gently but evenly, and shape without compressing.
Is this recipe keto?
Yes. The unrounded calculation gives 9.28 g total and 5.63 g net carbs per serving. Sweetened sauces or larger amounts of onion can increase them.
